香煎蔥花嫩雞 Chicken fried with scallions


決定從下星期開始要認真記錄星期五公司午餐分享的內容,由於每次僅能在時間內剛好完成,實在也沒有空閒的片刻拍個什麼,說起來也有點可惜。藉著這星期準備的嫩煎雞肉羅勒番茄拌麵大獲好評,原本還擔心我煎的那一座雞肉山消化不完,沒想到最後一塊也不剩,還有不少人跑來詢問作法,好開心!!突然意識到原來這些平常自己亂做,也沒有特定比例可遵循的家常料理,原來也是很值得記錄下來分享的~

馬上來分享連荷蘭人都喜歡的香煎蔥花嫩雞。

香煎蔥花嫩雞 
準備時間 30分鐘
等待時間 5小時至隔夜

Chicken fried with scallions 
Preparation time : 30 minutes
Waiting time : 5 hours or overnight

食材與作法
雞胸肉 2塊(約325g)
牛奶 130cc
蔥 1-2支
大蒜 1瓣
醬油 2.5T
麻油 1T
米酒 1T
清水 1T
黑胡椒粉 適量
辣椒粉 適量
紅椒粉 適量
麵粉 適量

INGREDIENTS & METHODS
2 chicken breast (about 325g)
130cc milk
1-2 scallions (green onions)
1 garlic
2.5 tablespoons soy sauce
1 tablespoons sesame oil
1 tablespoons rice wine 
1 tablespoons water 
a pinch of black pepper
a pinch of chili powder
a pinch of red pepper powder 
some flour


雞胸肉切成同樣大小。
Cut the chicken breast into pieces.

浸泡至牛奶中 4 小時以上至隔夜,可以讓肉質軟嫩。
Soak the chopped chicken with milk for at least 4 hours or overnight (in order to soften the chicken and make it more juice.)

雞肉從牛奶中撈起瀝乾備用。
Drain the chicken for later.

蔥切成蔥花,大蒜切細末備用。
Mince scallions and garlic into small pieces. 

取一個容器,放入雞胸肉、蔥花與蒜末。
Put chicken, green onion and garlic together in a container.

倒入醬油、米酒、水、與其他調味料。(調味僅供參考,鹹度請依照喜好自行增減歐~)
Pour in soy sauce, rice wine, water, and all the spices. Adjust the amount depending on your own taste.

用湯匙攪拌或用手抓三分鐘,讓肉吸收所有醃料,放入冰箱醃 2 小時以上。
Massage the chicken for 3-5 minutes by hand (or stir with chopsticks/spoon), making the chicken absorb the marinade. Marinate the chicken in the refrigerator for at least 2 hours.

雞胸肉裹上一層薄薄的麵粉。
Slightly bread the chicken with flour piece by piece.

平底鍋中倒入適量的油,放上裹好麵粉的雞胸肉。
Pour some oil to the pan. Fry the chicken with medium heat.

煎至兩面金黃即可。
Fry the chicken until golden brown on both sides.

將將!我們今天的美味午餐,香煎蔥花嫩雞、單面煎荷包蛋、烤番茄與茄子、糙米飯,營養100 :))
Meanwhile you also can prepare side dishes, such as grilled tomato, boiled vegetables, and a fried egg. Put them altogether with a bowl of rice.

  2. Hi Yi-Chu, this looks like a delicious chicken recipe. Norbert says it taste delicious, and he always take photo of your food to show me. He and the other colleagues are lucky to have you cook for them.
